Cold Storage

Cold storage is basically a term used for refrigerated of frozen storage facilities, usually used to store food or pharmaceuticals. "Cold storage" could be something as small as a walk-in cooler or freezer (defined by CA as 2,000 sq ft or less) or a 200,000 sq ft warehouse.

Temperature is the most important factor influencing bacterial growth. Pathogenic bacteria do not grow well in temperatures under 3 °C (38 °F). Therefore, meat should be stored at temperatures that are as cold as possible. Fruits can be stored in ordinary condition only for 2-3 days during winter and one to two days during summer season. 4. Tomato: Mature green fruits may be stored at 10 0C – 14 0C for 30 days and ripe tomatoes at 4.5 0C for 10 days under 85-90 % relative humidity.
